Blended whiskey accounts for a large majority of Irish whiskey production, with every distillery taking their own unique approach. Particular blends allow each distillery to discover their own one-of–a-kind flavour profile.
Our Stout Cask is a blend of grain (75%) and malt (25%) and features fiery aromas of chocolate, raisins and cracked nuts. Flavours of coffee and vanilla enrich this whiskey, a direct result of housing the alcohol in casks that were once home to Black’s of Kinsale Stout.
Proving the endless possibilities of an expertly-crafted blend is our Cask Strength whiskey. This is a grain (66%) and malt (34%) blend, with 62% ABV. It’s recessed in bourbon casks for six months to marry together and bring you notes of dried fruits and orange peel.

Single Malt Irish Whiskey
Made from 100% malted barley, all at the same distillery, Single Malt Irish Whiskey is aged for at least three years in oak barrels and bottled at 40% abv or higher. Our West Cork Single Malt Irish Whiskey is triple distilled and matured in bourbon casks, with a flavour profile that includes citrus, vanilla and spice. Our single malt is smooth and balanced with a touch of sweetness.
Made with 100% Irish grain, our 7-Year-Old Single Malt, is matured in Bodega Oloroso casks from the Tolerina Rodriguez bodega in Cadiz, Spain for 4 years then further aged in first fill Bourbon Barrels for 3 years.
Our Sherry Cask Single Malt Irish Whiskey is aged in first fill Bourbon casks and finished in Bodegas Baron sherry casks. This whiskey is non-chill filtered and has no added colour. This particular single malt has an initial sweet taste, with a dry spicier finish.
Single Pot Still Irish Whiskey
Made from a combination of malted and unmalted barley, Single Pot Still Irish Whiskey delivers a creamy and spicy taste. The key difference between a Single Malt and a Single Pot Still is the barley content, with ours composed of a unique mash ratio of 66:33 malted versus unmalted barley. Our 5 year old Single Pot Still Irish Whiskey is matured in First Fill Ex Bourbon Casks.

Single Grain Irish Whiskey
Single grain may not be the most well-known Irish whiskey, but it’s a style we’re passionate about and it requires a lot of care and precision. Single grain whiskeys include whole grains other than malted barley, for example corn, wheat or rye. It can be composed of one or more grains, but it must be produced at the same distillery.

Beer Series
The beer series at West Cork Irish Whiskey consists of the West Cork IPA Cask and Irish Stout Cask Matured Blended Irish Whiskey. Both whiskeys are blended with grain and malt, aged in first fill bourbon casks and finished in casks that held Blacks of Kinsale IPA or Blacks of Kinsale Stout.

The West Cork Cask Finishes is a collection of triple distilled single malt Irish whiskeys. Each whiskey has been aged in first-fill bourbon casks and then finished in casks selected from the finest fortified wines and spirits.
Glengarriff Series
The Glengarriff Series consists of the Peat Charred Cask Finish and the Bog Oak Charred Cask Finish. These triple distilled single malt Irish whiskeys are matured in sherry casks before being treated to a finishing period in peat charred casks and bog oak charred casks.
Maritime Range
Presented in a bespoke Maritime shaped bottle, this unique maritime Irish Whiskey range is inspired by the founders and background of West Cork Irish Whiskey. The Maritime range bottle is a masterfully crafted custom-blown spherical bottle with an off centre spout to aid a smoother pour of whiskey. The range comprises rum cask, port cask, sherry cask and virgin oak cask single malt Irish whiskey.
