January 25th is Irish International Irish Coffee Day which gives us the perfect excuse to indulge in one of Ireland’s most iconic drinks. With its comforting mix of coffee, whiskey, sugar, and cream, the Irish coffee is a true classic – and there’s no better time to master your own version.

Ingredients:
35.5ml West Cork Original Bourbon Cask Blended Whiskey
15ml Demerara sugar syrup
80ml Espresso
25ml Whipped Cream
Top with hot water
Dark chocolate for garnish
Method:
Pour the West Cork Original Bourbon Cask Blended Whiskey and Demerara sugar syrup into a pre-warmed Irish coffee glass.
Brew 80ml of hot espresso and pour it into the glass.
Add a small splash of boiling water to adjust the consistency to your liking.
Carefully float the whipped cream on top by pouring it over the back of a spoon.
Finish with a sprinkle of grated dark chocolate over the cream as a garnish
