Our Journey
Childhood friends John, Ger and Denis began operating West Cork Distillery in a room at the back of Denis’ house in Unionhall, Co. Cork. From two small stills, bought off a schnapps producer in Switzerland, to their own distillery in Skibbereen, the business has continued to flourish since its inception in 2003.
They remain at the helm and their creativity and determination continues to drive Irish Whiskey into a new era. A stronghold team of 140 supports their mission at West Cork Distillers on Marsh Road.
Everyday, four truckloads of spring barley arrive at our distillery. Each truck contains 18 to 20 tons of barley and hails from local farms in Cork.
Through commitment, perseverance and long-standing relationships with our local community, we now have distributors across the globe and our award winning whiskey is sold in almost 70 countries.

Innovative Distilling
At West Cork Irish Whiskey, we are disruptors and value passion and innovation. So much so, we have designed and crafted our own handmade pot stills, including ‘the Rocket’ which uses a rapid distillation process to enhance flavour for a cleaner, smoother tasting whiskey.
At West Cork Whiskey, science is fundamental to great tasting flavour. The distillery applies chemistry techniques that aren’t usually found in whiskey production, such as Gas Chromatography and Reverse Osmosis, which you can dive into more on our whiskey processes page.
